A donair is all beef meat with spices (cooked on a vertical broiler and shaved off) on a pita bread with a sweet-tangy-garlicky sauce topped with tomatoes and onion. This is a Canadian Maritime favorite.
The donair originated when two brothers, John and Peter, moved to Canada from Greece in the 1960's and opened a pizza shop in the 1970's in Bedford, Nova Scotia, Canada. The brothers loved their homeland food, the gyro. The traditional gyro did not go over well with the people of the Halifax area. So Peter came up with a new recipe of ground beef, secret spices, and a sweet sauce. He called it the donair. The donair has become the official food of Halifax, Nova Scotia.

We are a mother-daughter duo, dual citizens between Canada and the USA. Carolyn is originally from California and moved to New Brunswick, Canada as a teen. That is where Carolyn met her husband, Chris, and started our family of four with two daughters. When the kids were young, they moved to Windham, Maine in 2001. Bri has been in the service industry for 10 years in a variety of roles from dishwasher to manager to head chef, in both Canada, where she attended UNB, and in southern Maine.
Donair's are Chris' favorite food, so after a few years of thinking about it, the idea of a donair food truck is coming to life!
